Serves 4


 4 Sea Bass fillets (4-6 ounces each)

 1 tablespoon canola or olive oil

 3/4 teaspoon salt

 2 tablespoons FC Seafood Blend

 4 pats of unsalted butterr


Directions

1. Season the Sea Bass on all sides with salt Flavor Cranks’ Seafood Blend.

2. In a large saute pan over medium heat, add the canola oil and heat the oil to a

slight smoke. Place Sea Bass skin side down for about 3-minutes. Use a fish

spatula to hold the fish down for the first minute to keep an even sear on the

entire skin. This will give the fish a beautiful crisp skin and golden color.

3. Carefully turn the fish over to finish the other side and 1 pat of butter on top.

Place pan in a preheated 375 degrees oven and allow to roast for another 5-6

minutes. To check doneness, insert a pairing knife into the thickest part of the

fish, making a small cut. If the juices run clear and the meat is white, the fish is

done. Remove the sea bass, hold in a warm place and allow to rest for about 3

minutes.

4. For presentation, serve this dish in a large soup bowl. Using a ladle, scoop a

small amount of Sweet potato mash into the bottom of each bowl. Layer a small

amount of spinach on the mash and finish with the Sea Bass. Garnish with Fresh

cut cherry tomatoes and fresh basil.
